Now I’m not the best cook in the world but somehow my little concoctions always turn out delicious. I’m also a lazy cook so whatever I make has to be prepped and cooked in 20 minutes or less or I’m just not interested 10, if it’s breakfast. I’m always open to requests and suggestions so this one comes from a friend of mine who asked for my recipe and here it is!
One of my go to’s is this egg scramble. It’s super easy to make and you can add your favourite veggies not just the ones I have listed here.
-Turkey Bacon-

-Tomatoes-
-Eggs-
-Peppers-
-Tortillas-
-Mushrooms-
-Coconut Oil-
I cook the turkey bacon first and while that’s cooking I prep my eggs and veggies. I like to use cage free eggs, organic coconut oil, sea salt and wheat tortillas I didn’t specify above, but these are healthier options! There is already so much flavour from the fresh veggies so it taste great without cheese when you add just a pinch of sea salt.
After I mix my eggs and veggies together, it doesn’t take too long to cook. Once the eggs are scrambled I throw the tortillas on the pan for a few minutes. This not only warms them up but it give the tortillas a nice crispy taste which goes great with the turkey bacon. At the end I like to slice up a few avocados to throw on top.
